The problem
Old store coolers often have a hidden secret: nobody knows what gas is inside them anymore. Then the cooler runs warm, the food starts heating up, and the repair person has to guess while the owner watches the clock. There are 425,200 heating and cooling repair workers in the United States, per the Bureau of Labor Statistics, and one broken restaurant cooler can put $4,000-$10,000 of food at risk, per Mobile Cold Storage. The usual fixes are either expensive test machines, paper charts that only work when the gas is clean, or ripping everything out and starting over. Why now: the Environmental Protection Agency says new cooling-gas rules started hitting equipment in 2025 and run through 2028, which means more old gas, new gas, and bad mixes are colliding in the field.
